Ingredients

  • 4 cups cherry tomatoes, halved (or 3 large tomatoes, chopped)

  • 2 large English cucumbers, sliced

  • ½ red onion, thinly sliced

  • 1 green bell pepper, sliced (traditional, optional)

  • ¾ cup Kalamata olives, pitted

  • 6–8 oz block feta, sliced or broken into chunks



Dressing


  • ¼ cup extra-virgin olive oil

  • 2 Tbsp red wine vinegar

  • 1 tsp dried oregano (Greek oregano if possible)

  • ½ tsp sea salt

  • ¼ tsp fresh cracked black pepper

  • Optional: squeeze of lemon juice for brightness


Preparation


  1. Add tomatoes, cucumbers, onion, pepper, and olives to a large bowl.

  2. Whisk olive oil, vinegar, oregano, salt, and pepper.

  3. Pour dressing over vegetables and toss gently.

  4. Top with feta chunks (don’t crumble—keep it bold).

  5. Finish with a drizzle of olive oil and a pinch of oregano.
