Ingredients
3 cups (180 g) Jovial All-Purpose Einkorn
Flour (measured unsifted)
3 tbsp sugar
2 tbsp baking powder
0.5 teaspoon salt
3 large pasture raised eggs
3 cup (240 g) milk
3 tsp olive oil or melted butter
handful of chia seeds
1/2 tsp orange, almond or vanilla extract

Pumpkin 1/4 of a cup
Shredded cheddar cheese 1/3 cup
Garlic pepper seasoning blend
Pears, apples, or bananas (cream or sauce)

Preparation
Pre-heat griddle (or a large skillet) to medium temperature.
Sift all dry ingredients into a large glass bowl.
Using the whip attachment on a standing mixer, whip the eggs and milk until frothy.
Melt butter and set aside if using instead of olive oil.
Pour egg mixture into the dry ingredients and mix together until the consistency of a thick milkshake.
Make sure not to over-mix or your pancakes will be tough.
Pour olive oil (or melted butter) into the batter and cut in using a spatula.
Lightly oil the griddle. The griddle is at the right temperature when it begins to glisten.
Using a ¼ cup measure per pancake, cook pancakes for 1 to 2 minutes until the edges are dry and bubbles start to form. Flip and cook for another 1 to 2 minutes, until cooked through.
Add toppings and enjoy!
