  • 2 cups cooked chickpeas, drained & patted dry

  • 2 Tbsp extra-virgin olive oil

  • 2 cloves garlic, minced

  • ½ tsp turmeric

  • ½ tsp garam masala

  • ¼ tsp sea salt (adjust to taste)

  • 2 cups fresh spinach, roughly chopped

  • 1 Tbsp almond flour

  • ½–¾ cup miso broth (warm; light miso preferred)

  • Optional: pinch black pepper or cayenne

  • Finish: squeeze lemon or drizzle olive oil


Preparation


🍳 Instructions


  1. Sauté + brown


    Heat olive oil in a wide skillet over medium heat. Add chickpeas in a single layer; let brown 2–3 minutes undisturbed.

  2. Bloom spices


    Stir, add garlic, turmeric, and garam masala. Cook 30–60 seconds until fragrant.

  3. Build the sauce


    Sprinkle almond flour over chickpeas, stir to coat, then slowly pour in warm miso broth while stirring. Simmer 2–3 minutes to lightly thicken.

  4. Wilt spinach


    Add chopped spinach; fold gently until just wilted and glossy.

  5. Finish + adjust


    Taste for salt/heat. Add lemon or olive oil to brighten.
